Lactose-Free Cooking and Baking Substitutes
If you are very sensitive to lactose like me, you can develop uncomfortable symptoms after eating lactose-containing baked goods. I compiled a list of substitutes for lactose-free ingredients that you can use in cooking and/or baking.
Buttermilk (1 cup)
1 cup lactose-free milk plus 1 tablespoon lemon juice or white vinegar
1 cup soy yogurt
1 cup warm water plus 1 tablespoon lemon juice
1 cup coconut milk
1 cup soy milk plus 1 tablespoon lemon juice
Yogurt (1 cup)
1 cup soy yogurt
1 cup soy sour cream
1 cup unsweetened apple sauce
1 cup fruit puree
Heavy cream or half-and-half (1 cup)
¾ cup lactose-free milk plus 3 tablespoons margarine
Whipped cream (1 cup)
1 sliced banana and 1 egg white beaten until stiff. Serve immediately.
2 egg whites at room temperature plus 2 tablespoons sugar plus ¼ teaspoon cream of tartar. Beat all ingredients with electric mixer until stiff peaks form. Serve immediately.
Whipping cream (1 cup) (for baking only - will not whip)
1 cup lactose-free milk plus ⅓ cup melted margarine

What does it mean "cream of tartar"? Tartar = potassium tartrate?
