These stuffed peppers are extremely easy to make and fast to prepare. Great for a weeknight meal.
Makes 5 servings
1 pound ground turkey or chicken
½ cup fresh flat parsley, chopped
¼ cup yellow onions, diced
1 small can tomato sauce
¼ cup water
½ cup fresh dill
1 teaspoon sugar
salt and pepper to taste
5 red, yellow, or orange sweet bell peppers, cored, seeds removed, lids saved
Heat a skillet over medium high heat. Add the meat and cook until no longer pink. Drain the grease, then mix the meat together with the parsley and onions. Season with salt and pepper.
Stuff the peppers with the meat mixture, cover with the saved pepper lids, and set aside.
In a wide pot or Dutch oven, mix tomato sauce, water, and sugar. Season with salt and pepper. Arrange the peppers in an upright position in the pot. Simmer for about 15 minutes, or until the peppers are soft. Add water to the pot as needed during simmering. You can also cook while covered, if you want the peppers even softer.
Serve immediately.
