Holiday Treats: Crispy Peanut Butter Balls and Almond Joy Haystack Cookies

These are the winning recipes for our Whitley's Peanut Giveaway. Great no-bake holiday treats that make great gifts. 


Almond Joy Haystack Cookies
This winning recipe was submitted by CJ. Super easy, no-bake cookies!

Makes 12-24 haystack cookies

1 large bag (or 2 regular-sized bags) of dairy-free, semi-sweet chocolate chips
3 large handfuls of pretzel sticks, each one broken in half
2 cups shredded coconut, sweetened
2 cups slivered almonds

In a large saucepan, melt down the chocolate chips on medium-low heat. Add the pretzels and give a good stir. Add the coconut and almonds, one cup at a time. Stir in between additions until all ingredients are coated well with the chocolate. 

Drop by generous spoonfuls onto wax paper and let cool/harden. 



Crispy Peanut Butter Balls
This winning recipe was submitted by Donna. Best peanut butter balls we've ever tasted!

Makes 20-24 peanut butter balls

1 cup peanut butter
1 1/2 cups Rice Krispies (we used the Gluten Free kind, they were great!)
7 ounce jar of Marshmallow Crème
1 large bag (or 2 regular-sized bags) of dairy-free, semi-sweet chocolate chips

Mix first 3 ingredients in a medium mixing bowl. Roll into 1” balls. Meanwhile, melt the chocolate chips over medium-low heat. 

Once melted, dip balls in chocolate and place on wax paper to cool/harden. Use a fork to scoop the balls out of the chocolate, then carefully transfer to wax paper.
